Obtained from 100% Negroamaro grapes, planted in the traditional alberello system, this wine is aged in barriques, then aged in the bottle.
Bouquet: It reveals mature red pulp fruit notes and reminiscants of fruits in alcohol, cherry and sour cherry. Spicy notes of cocoa beans, liquorice, cloves and dark chocolate. Toasty.
In its taste, the elegance has the leading role, thanks to its soft tannins and a clear spicy note of Jamaican pepper, Szechuan pepper and preserved fruit.
Food suggestion: Particularly well-suited to feathered game, braised furred game, beef or horse stew, seasoned cheeses, Parmigiano aged 60 months, Bitto and Bagoss.
The perfect dish: Braised roebuck cooked at low temperature with potato veloute, Fulgeo reduction sauce and dark chocolate.
